Jicama ( Cây củ đậu)

Although more commonly seen in Latin American cooking, jicama, a bulbous root vegetable that is a actually a legume, is also widely used in Southeast Asia kitchens and makes a good substitute for fresh water chestnuts. Peel away the dark brown skin
before using.
